The team at Woburn Country Foods have been in the farm and butchery business for over 80 years and bring this knowledge and experience to their meat selection. All of our farmer suppliers work under the British Farm Assured, Red Tractor Scheme to ensure the well being of the livestock. We are an EC licensed, SALSA Approved cutting plant based in Haynes, Bedfordshire.
We select the best bodies of beef from the Home Counties, using traditional breeds including Sussex, Angus and Short Horn. Our farmers work to the Farm Assured Standard and are committed to high levels of animal welfare. They work hard with us to produce carcasses with a good combination of lean and marbled meat. At our Food Standards Agency approved cutting facility we have full traceability on all beef from field to fork. We mince all our meat on site for freshness and traceability.
Our beef is hung on the bone which improves the flavour and tenderness of the meat, giving a succulent, mouth watering flavour. All orders are cut fresh on the day of delivery to the customer’s individual specification. Our butchers welcome discussion with customers as to their requirements and can draw upon the knowledge of cuts if requested. Only beef that reaches our standards of animal welfare, health and hygiene, and carcass quality is chosen by the butchers.

Woburn lamb grazes the lush pastures of the Ouse Valley meadows from Bedfordshire villages such as Harrold, Pavenham and Oakley. We look for a carcass with good confirmation that has the best ratio of meat to fat which ensures the most succulent meat possible. Our lamb is slaughtered locally in Bedfordshire to reduce transport time for the animals keeping stress levels to a minimum. This ensures a better eating quality and helps keep food miles to a minimum.
Our organic venison roams the beautiful 3000 acre Woburn Abbey, Bedford Estate. We trust the expert Woburn gamekeepers to select the best Pére David and Red deer from the herd that will give us a product that is second to none. The Woburn Estate herd numbers are carefully managed for optimum health and wellbeing of the animals. The meat is hung to enhance the tenderness and enhances its complex and elegant flavour. As the deer are ‘non-native’ breeds they are available all year and are not subject to the wild deer season. However the carcass quality can drop during the summer months and as the gamekeepers control the supply, venison may be scarce during this time.
Our pork is from Cross Keys Farm Pork from Whipsnade, Bedfordshire. We use a British Landrace crossed with a Large White pig to give a naturally lean pig with plenty of flavour. We hand make our sausages, and dry cure our bacon and gammon on site. We also source outdoor reared pork from Dingley Dell, Suffolk. The pigs are born, reared and grown outdoors all year round. Dingley Dell’s beautiful flavour comes from the breeds used, great animal health and welfare, naturally balanced nutrition and a stress-free environment.
Our chicken comes from Diaper Poultry. Diaper Poultry Ltd is a long established family firm based in Suffolk which has an enviable reputation for supplying quality fresh chicken. The St George’s brand is dedicated to chicken produced to high welfare standards. The St. George’s brand is for consumers with the interest of animal welfare at heart and a preference for antibiotic free produce.
Provenance of Wodehill Farm
We farm native and traditional breeds of sheep, cattle and goat in North Bedfordshire using a grass based, high welfare approach to produce our own milk, cheese and meat. We produce a range of hand made, fresh and semi-soft artisan cheeses. All the milk that we use comes from our own herd of pedigree Jersey and Red Poll cows and our own herd of dairy goats. We put every effort into producing the highest quality of milk in order to produce the best possible cheese.
